Lycopene, a powerful antioxidant, is a carotene (a member of the carotenoids) that is responsible for the red/pink coloring in fruits and vegetables. High levels reside in the adrenal glands, lungs, prostate, colon and skin. Studies show that lycopene has one hundred times the ability of vitamin E to neutralize singlet oxygen; not technically a free radical but just as damaging. Singlet oxygen produced during exposure to ultraviolet light is a primary cause of skin aging. Lycopene seems to protect against cancer of the digestive tract, rectum, colon, prostate, and lungs. It may also be involved in the prevention of cataracts and heart disease. No adverse affects have been reported from excess intake of lycopene other than the skin and liver turning an orangey-yellow color which can be corrected by a lycopene-free diet.

FACTS ABOUT ANTIOXIDANTS
Given its antioxidant properties, substantial scientific and clinical research has been devoted to a possible correlation between lycopene consumption and general health. Early research suggested some improvement of cardiovascular disease, cancer, diabetes, osteoporosis, and even male infertility. Researchers have also found a connection between eating tomatoes and cancer risk. Therefore, lycopene is being investigated as a potential agent for the prevention of some types of cancers, particularly prostate cancer.

FOOD SOURCES
The body does not produce lycopene so it is necessary to get it from dietary sources. Fortunately, this is a very easy thing to do…just look for the reds; watermelon, peppers, pink grapefruit, strawberries, etc. And the good news is, processed tomato sources are better absorbed by the body so go ahead and eat products like spaghetti sauce and ketchup. Make your own sauces because cooking tomatoes with a little olive oil increases lycopene absorption. And lycopene is best absorbed when taken with a small amount of fat, so your kids were right – pizza is health food!
